Cookies:
1 pkg yellow cake mix
1/2 cup quick oats
2 1/2 tsp pumpkin pie spice
1 egg
2 Tbsp canola oil
1 (15 oz) can solid pack pumpkin
Icing:
1/4 cup frozen concentrate orange juice, thawed
1 tsp orange zest
1/2 tsp vanilla extract
2 1/4 cups confectioner's sugar
For cookies, combine cake mix, flour and pumpkin pie spice. Add egg, oil and pumpkin; stir until just moistened. Drop by large spoonfuls onto lightly greased cookie sheet. Bake 12-14 minutes at 350 degrees. Allow to cool completely before icing.
For icing, combine all ingredients and whisk until smooth. Generously frost the top of each cookie.
Makes 2 dozen large cookies.
