Game Night Hot Fudge Cake


I've made hot fudge cake before (yum, especially on a cold winter's night) but I found this recipe where it bakes in the crock pot. Doesn't get much easier than this. Mix up your ingredients and set your crock pot to do the rest. Play a few rounds of Hand & Foot or R2-D2 Pop-o-Matic Trouble and bam! Ooey, gooey hot fudge cake! Top it with some vanilla ice cream and you'll have everyone wanting to be on your team.

Crock Pot Hot Fudge Cake
(made in a 3-quart slow cooker)

2 cups flour
1 cup granulated sugar
1/4 cup cocoa
1 Tbsp + 1 tsp baking powder
Dash salt
1 cup milk
1/4 cup vegetable oil
2 tsp pure vanilla extract
1 cup chocolate chips (milk or semi-sweet, your preference)

Combine flour, sugar cocoa, baking powder and salt. Stir in milk, oil, vanilla and chocolate chips; continue stirring until well-combined. Lightly spray inside of a crock pot with nonstick cooking spray and evenly spread batter on bottom.

Whisk together 1 1/2 cups brown sugar, 1/2 cup cocoa, and 3 cups hot water. Carefully pour over the top of cake batter. Cover with lid and cook on HIGH setting for 1 1/2 - 3 hours. Cake is done when toothpick inserted near center comes out clean.

Spoon warm cake with fudge sauce into bowls and serve with ice cream. Serves 12.

How would it be to add chopped pecans or walnuts to it?

Aunt Kathleen, the original recipe calls for chopped walnuts, so I bet it would be delicious. I just skipped the nuts and added chocolate chips instead because of the group I was making it for...
